2 tablespoons of flax seed or chia seed
2 tablespoons of hemp protein powder (chocolate or regular flavour. If you use regular flavour then add 1 tablespoon of unsweetened cocoa).
1 egg or egg white
1 tsp of vanilla essence
2 tablespoons of almond milk
1/4 tsp of gluten free baking powder
2 tablespoons of coconut sugar (reduce to 1 tablespoon in you use the chocolate flavoured hemp protein powder as this usually is sweetened).
NOTE: I've doubled the quantity in the pictures.
4) Microwave in high for 2.30 mins.
5) Let it sit for a few minutes out of the microwave before you serve
.TIP: You could also bake this cake in a non stick cake pan at 350 degrees for approx 15 to 25 mins. You probably want to double or triple the recipe if you do.
