2 packages of mini or regular, ice cream sandwiches (16)
1/4 or 1/2 litre of heavy whipped cream (i used a 1/4 of a litre because i used the mini sized sandwiches)
2 tablespoons of coconut palm sugar
1 flake, chocolate bar or crushed oreo cookies or sliced strawberries (you can use any kind of topping you think will work)
freeze dried cranberries (for topping) or sprinkles or sliced fruit would work as well.
2) Stir in sugar. I've only used 2 tablespoons because i don't like it too sweet, but you can add more.
8) Cover the top layer with cream and add the last third of the flake chocolate bar and then add the freeze dried raspberries to garnish the top.
