2 cups of almond flour
2 tsp of gluten free baking powder
2 scoops of protein powder or 2 packets
1/2 cup of greek, no fat yogurt or unsweetened apple sauce
2 eggs
1/2 cup of milk
2 tsp of vanilla (4 tsp if your protein powder has no vanilla in it)
2 shots of espresso coffee (i used decaf)
6 tablespoons of maple syrup (you may need to add more if your protein powder isn't sweetened)
4) Bake for 20 to 25 mins at 355 degrees F.
Makes approx: 12-14 muffins
