
1 pound of extra ground chicken or beef (you can use tofu, a meat substitute or simply omit the meat for a vegan recipe)
1 can of organic red kidney beans
1 can of organic tomato sauce with no salt added
3/4 mini yellow and red peppers or 1.5 large one
1 chopped onion
1 tablespoon of chopped garlic
1 tablespoon of vinegar
1 tablespoon of organic ketchup
1 tablespoon of extra virgin olive oil or coconut oil
2 tablespoons of lemon juice
2 teaspoons of ground cumin
2 teaspoons of ground corriander
2 teaspoons of paprika
1 teaspoon of salt
2 teaspoon of pepper
Garnish:
cilantro
avocado slices
shredded cheese
jalapeno peppers
Optional: 1 tsp of chilli powder, 1/2 tsp of onion powder, 1/2 tsp of cocoa powder or 3/4 squares of dark chocolate (yes, tell your kids there is chocolate in it!)
Tip: If you aren't serving it on a bun and find it too dry, then go ahead and add another can of tomato sauce and beans.
2) Reduce heat to medium and add chopped onion and saute with garlic until golden brown.
7) Turn heat to low and add all the spices, lemon juice and vinegar.
8) Simmer for a few minutes.
